Spectacular strawberry cheesecake that doesn't require kneading dough: it's based on regular cookies.

Cheesecakes are much easier to make than many popular cakes. For this dessert, you don't need to knead the dough, because ordinary cookies will do for the base. Add any of your favorite fruits or berries to the top, but strawberries are, of course, the most delicious.

The idea of making strawberry cheesecake from cookies was published on the Instagram page of food blogger Tata Chudnova (chudnova.food). It's perfect for family tea parties.

Ingredients:

  • biscuits – 300 g
  • butter – 110 g
  • lump-free cottage cheese or cream cheese – 550 g
  • sugar – 110 g
  • 33% cream – 170 ml.
  • eggs – 2 pcs.
  • strawberries – 300+50 g
  • sugar – 70 g
  • corn starch – 20 g

Ingredients for the base:

1. Crush the biscuits until they are crumbly.

2. Add the melted butter.

3. Stir until smooth.

4. Put half of the cookies in a split mold covered with parchment and form the sides.

5. Then use the other half to form the bottom.

6. Put in the freezer for 5 minutes.

7. For the filling, the cottage cheese should be lump-free or you can use cream cheese.

8. Add sugar, eggs, and cream.

9. Stir with a whisk without a mixer.

10. Transfer to the mold to the base and level.

11. Put a container of water in the oven, and pour into the baking sheet.

12. Bake for 1.5 hours at 130 degrees, not higher.

13. For the strawberry jam, put 300 g of strawberries in a saucepan or a thick-bottomed saucepan.

14. Add sugar, and starch and grind in a blender.

15. Add 50 g of unchopped strawberries, but cut into 4 pieces.

16. Put on medium heat and bring to thicken, stirring occasionally.

17. Cover with foil in contact, let cool slightly.

18. When the cheesecake is baked, let it stand for another half hour in the open (off) oven.

19. Put the strawberry filling on the slightly cooled cheesecake, smooth it out, and refrigerate overnight.
