What secret ingredient to add to Easter dough to make it fluffy and flavorful: sharing the technology.

The key to a tasty and fluffy Easter cake is high-quality yeast. The dough is usually made with milk. But there is another ingredient that will add a special flavor and aroma. This ingredient should not be neglected.

The idea of making fluffy yeast Easter cake with cognac was published on the Instagram page of food blogger Iryna Kozachuk (irina_kozachuk). It is alcohol that plays an important role in baking the dessert.

Ingredients:

  • milk – 500 g
  • yeast – 50 g
  • sugar – 300 g
  • eggs – 5 pcs.
  • oil – 50 g
  • butter – 100 g
  • raisins – 100 g
  • cognac – 25 g
  • flour – 1-1.2 kg.
  • vanillin
  • zest of 1 lemon

Method of preparation:

1. Add 1 tbsp of sugar, yeast, and 2 tbsp of flour to warm milk.

2. Stir until smooth, cover with a towel, and leave in a warm place for 20 minutes to form a foamy cap.

3. Pour the eggs beaten with sugar into the dough, add vanilla, zest, and flour.

4. Knead the dough for 20 minutes.

5. Add alcohol, oil, soft butter, and washed raisins.

6. Knead for another 20 minutes. Then cover the bowl with a towel and leave it in a warm place – it should rise 3 times.

7. Press the dough down and put it into the molds to 1/3 of the volume. You can grease your hands with vegetable oil.

8. Cover with a towel and leave to let the dough come up almost to the edges of the molds.

9. Bake in a preheated 200-degree oven for 15 minutes, then reduce the temperature to 180 degrees and bake until done. Check with a wooden skewer.

10. This amount of dough makes 5 Easter cakes with a diameter of 14 cm.
