Moist Easter cake like fluff: how to make a successful dough.

It is very tasty when the cake is moist. The dough rises well and becomes tender and very juicy after baking. This effect can be achieved by making a dough with milk.

The idea of making a moist, fluffy Easter cake was published on the Instagram page of food blogger Myroslava Krutiy. It will be delicious if you add a lot of raisins and dried fruits.

Ingredients for the dough:

  • warm milk – 200 ml.
  • sugar – 1 tbsp
  • yeast – 50 g
  • flour – 100 g

Method of preparation of the dough:

1. Mix everything until smooth.

2. Cover with foil and leave at room temperature for 20 minutes.

  • eggs – 1 whole
  • sugar – 200 g
  • honey – 40 g
  • cream 20% – 100 ml.
  • kefir – 50 ml.
  • lemon juice – 1 tbsp.
  • vanillin
  • butter – 150 g
  • oil – 2 tbsp.
  • flour – 700 g
  • salt – 1/4 tsp.

Method of preparation:

1. Beat the yolks and egg with sugar and honey until smooth.

2. Add the cream and kefir, vanilla, lemon juice and gradually the flour.

3. Knead very well – the dough is sticky.

4. Gradually add pieces of butter at room temperature, stir well each time until the butter is dissolved, then add the oil.

5. Cover the dough with plastic wrap and let it triple in size at room temperature. This process can even take 2 hours. The main thing is not to rush.

6. Put the dough on a floured mat.

7. Add raisins, chocolate drops, candied fruit and mix well. The dough will become stiffer as you mix. To make it easier to work, dip your hands in flour.

8. Leave the dough on the mat for 20 minutes, and then you can form the cakes.

9. The cakes rise in the molds for 1 to 2 hours at room temperature.

10. Preheat the oven to 180 g and bake for 10 minutes.

11. Reduce the temperature to 160 degrees and turn on convection for another 30 minutes.
